Mid-Day Foods (lunch)…

To keep my promise from my Quick Fix suppers post, here are some Mid-Day foods. AKA Lunch. 🙂

Lunch around here comes at about 12:15-12:30 P.M. I try to do more homemade, from the heart foods but sometimes I’m lazy. Yep, there are days we have some out-of-the-bag chicken nuggets or boxed corn dogs.

But then theres those days that we do homemade, yet simple….quick lunches.

A few of our favorite lunches are:

Grilled cheese with tomato soup
(Sometimes we’ll do ‘pizza grilled cheese’
*same concept, just butter your bread, used shredded cheese and few slices of pepperoni & a very tiny bit of marinara sauce. Then cook as you normally would*
*you’ll need some 10″ burrito tortillas. Shredded cheese and butter. Heat up your frying pan, use one that the tortillas will fit in nicely. Sprinkle some shredded cheese on one side of the tortilla and fold in half. Next put some butter in the pan and let it melt. Put your folded over quesidilla in the pan and let it heat for a few minutes. When its done, flip that baby over and fry the other side. Use a pizza cutter and cut it up how you’d like*
Bean burritos
*we use a large can of refried beans, some more 10″ burrito tortillas & shredded cheese. These also freeze really well (sometimes I send them with my husband to the rig, they’re quick and easy to throw in the microwave and eat if you’re in a hurry*
*if we’re making it for lunch, we leave the ground beef out. Just plain ol’ noodles and sauce here*
Ham & Cheese sliders
*our kids LOVE these!! Buy a pack of Kings Hawaiian dinner rolls, some ham and swiss cheese. Keep the rolls all together on a cookie sheet and using a serrated knife, cut them all in half at one time. Layer- ham, cheese then ham again. Put the tops of the rolls back on, brush on some melted butter and throw them in a 350° oven for about 7-8 minutes. All you want to do is heat them up :-)*

Some days we do sandwiches. PB&Js, ham/turkey and bologna sandwiches are a few favorites around here.

What are some of your kid’s favorite lunch foods?
